  • Head Sommelier-Maître D’

  • Wouter was born and raised in Noord-Holland, the Netherlands.
    From a young age, he developed a deep passion for the gastronomy profession and devoted himself to pursuing various educational opportunities in the field.

    By the age of 20, Wouter had already become a certified wine expert through the Wine Academy. He further advanced his expertise by earning several additional certifications from the Wines & Spirit Education Trust.

    Over the past six years of experience, Wouter has developed and refined his skills at Merlet, a one-Michelin-starred restaurant in the Netherlands.

    Having trained at Per Se, a three-Michelin-starred restaurant in New York, and Minibar, a two-Michelin-starred restaurant in Washington, Wouter is now eager to contribute his expertise to your experience.

  • Pastry Chef

  • Iris, born in Andalusia and raised in Alicante, where she began her pastry journey at the age of 20 by completing courses at the Tourism Development Center of Alicante. 

    Iris gains hands-on experience at Rafael Frías, a highly respected pastry shop in Alicante, where she worked alongside talented professionals who were instrumental in shaping their skills.

    Driven by a passion for continuous learning, she pursued a Technical Degree in Food Industries with a focus on Bakery, Pastry, and Confectionery. 

    Her outstanding performance during this program led to an internship at Sussu under the mentorship of José Manuel Samper, where she delved into Haute Patisserie and honed their craft further.

    Iris's insatiable curiosity and dedication then led her to the prestigious Torreblanca School, where she worked alongside Paco and Jacob. Here, she not only refined her expertise but also became a trainer for professionals from renowned establishments like Martín Berasategui, Quique Dacosta, and Susi Díaz.

    Returning to Alicante, she took on the challenge of introducing Haute Patisserie product lines for restaurants at María Auxiliadora pastry shop.

    Not much later Iris founded her own patisserie and began an online school for professionals.

    Iris lives in the Valley and while she has achieved so much independently—launching her own patisserie, teaching professionals, and consulting for the hospitality industry—she is truly eager to return to working within a collaborative team environment.

  • Born and raised in Alkmaar, North Holland, 21-year-old Ole Spek has already made a remarkable impact in the culinary world. His journey began at just 15, when his passion for cooking led him into the fast-paced environment of professional kitchens.

    Ole gained invaluable experience working at some of the most prestigious restaurants in the Netherlands. At Ron Blaauw, he mastered precision and learned the discipline required to excel in fine dining. At Olivijn, he refined his creativity, experimenting with flavors and techniques. Finally, at Daalder, he thrived in an innovative and dynamic kitchen, pushing his skills to new heights.

    Now, Ole is eager to embark on a new chapter at Elysium, bringing his passion, expertise, and drive to this exciting opportunity. With his roots in Alkmaar and his eyes set on the future, Ole is poised to leave his mark on the culinary world.

  • Born and raised in Venezuela, Liliana has spent over a decade immersed in the dynamic world of guest relations within the tourism sector.

    Her passion for hospitality and tourism grew as she honed her skills in diverse environments, including golf clubs, apartment complexes, and luxury vacation villas. Throughout her career, Liliana has taken on multifaceted roles, managing and coordinating responsibilities to deliver exceptional guest experiences.

    In 2014, Liliana relocated to Tenerife in the Canary Islands, where she enhanced her English language skills while continuing to thrive in the hospitality industry.

    Liliana’s mission is to ensure seamless operations, always striving for quality and outstanding service. She proudly describes herself as “resilient and empathetic,” two qualities she believes are essential for providing exceptional guest care.
